Low Carb Cheesy Ham Chowder!!!!

When it started snowing this morning, I knew I needed a warm, cozy fire and a big hearty bowl of hot soup. I remembered all the ham and broccoli I had in the fridge, so I decided to create a Cheesy Ham Chowder. It turned out so yummy, and I was able to use up all of our leftovers without my kids complaining. I thought about adding riced cauliflower to mimic potatoes, but the broccoli was a fabulous addition instead. This Cheesy Ham Chowder turned out so hearty and delicious! It’s perfect for a cold winter day…

Ingredients   [ For 4 to 5 people ]    [   Preparation time : 12 minute  –  Cooking time : 55 minutes  ]

  • 4 pieces of bacon
  • 1/2 of an onion chopped
  • 2 garlic cloves minced
  • 2 cups chicken broth
  • 1 1/4 cup heavy whipping cream
  • 2 cups ham
  • 2 cups broccoli
  • 1 tsp cream cheese
  • 1 tsp parsley
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 cups of cheddar cheese
  • 1/4 tsp Xanthan Gum

Preparation Method

  1. In a large stock pot or dutch oven, cook bacon.
  2. Remove bacon and set aside.
  3. Add onion and garlic cloves to the leftover bacon grease and saute on medium until the onion is soft.
  4. Add chicken broth, heavy whipping cream, broccoli, cream cheese, and spices then simmer on medium heat for 12 minutes.
  5. Reduce heat to low.
  6. Add chopped ham then slowly add cheese stirring constantly until the cheese melts.
  7. Sprinkle Xanthan Gum on top to thicken the soup and allow to sit for 5 minutes before serving.
  8. Sprinkle the reserved bacon on top and serve.
  9. Optional: Top with additional shredded cheese.
